Certification of the production line for both organic and kosher production allows VINKON S.A. for the production of products that meet the standards for the requirements specified in these product groups, i.e. products with ecological status and products with Kosher status.

Malt extracts

Malt extract is made from barley malt, which is ground and mashed. This process involves several hours of enzymatic treatment carried out at various temperatures using amylolytic enzymes naturally occurring in malt. After converting all the insoluble starch into soluble sugars, the solution, called mash, is separated into a solid fraction, i.e. spent grain, and a liquid fraction, i.e. malt wort.

The final stage of the production process is the concentration of the clear wort into malt extract. This process involves evaporating almost all the water under reduced pressure. Such processing conditions make it possible to preserve almost all the taste and nutritional values ​​of barley malt.

The color of the finished product depends on the type of raw material used. Therefore, extracts ranging in color from light amber to dark brown are obtained. The taste and smell of the extract is also characteristic of the malt used, slightly changed by thermal treatment.

Due to the natural gluten content, it is classified as an allergen.

Malt extract is used primarily in food processing to produce:

  • in bakery products, including: bread, cookies, crackers, sticks, breakfast cereals,
  • confectionery products, among others chocolate, bars, malt masses,
  • malt drinks,
  • fermentation industry.
